Turkey Chili

Ingrdients:

2 tablespoons canola oil
2 medium onions, chopped fine
1 red bell pepper, diced
5 cloves garlic, minced
1/4 cup chili powder
1 tablespoon cumin
3 teaspoons ground coriander
1 teaspoon hot pepper flakes
2 teaspoons oregano
2 pounds 93% lean ground turkey
3 cans. dark red kidney beans drained and rinsed
1 (28 oz) can diced tomatoes
1 (28 oz) can crushed tomatoes
2 cups low sodium chicken broth
Salt, to taste

Toppings can include:

avocado, scallions, red onions, sour cream, cilantro, sharp cheddar cheese

1.  Heat oil in a large dutch oven over medium heat.  Add onions, pepper, garlic,  and spices; cook stirring until vegetables are soft and beginning to brown.  Add the ground turkey and cook with a wooden spoon breaking up pieces until browned.


2.  Add remains ingredients and bring to a boil, then reduce to low and simmer, about 40 minutes.  Check for seasoning.
