2 sausages of your choosing
1 scallion
1 plum tomato
1/2 bell pepper
5 button mushrooms
6 eggs
1/2 T dijon
1 T butter

Preheat oven to 375FOn a medium high heat, cook the sausage and break them apart in the pan with a wooden spoon Large dice plum tomato and add to the pan Slice the button mushrooms but be sure to remove the stems (optional) and add to pan Rough chop scallion, add to panSlice 1/2 bell pepper, add to pan Crack 6 large eggs into the pan, make sure there are no shellsMix everything together on a medium low heat, hot enough to heat everything but not scramble Add the dijon and butter and mixGrate in the cheese and fold it in Pop the pan in the oven for about 15 minutes Serve hot
