Cooking with Nash: Pineapple Fried Rice with Chicken Teriyaki

Equipment: Cutting board, chef’s knife, two bowls, one plate two sauté pan two spoons.

Serves: 2-5


Ingredients

2.5# Chicken Thighs (skinless preferred)

2 Cups cooked Brown Rice

1 Whole Pineapple

2 Carrots, Small Diced

Garlic, 3 Tbsp Minced

Ginger, 2 Tbsp Minced

Salt, 2 Tbsp

Garlic Powder, 2 Tbsp

Allspice, 2 tsp

Cinnamon, 2 tsp

Furikake, 2 tbsp

Honey, 2 tbsp

Soy Sauce, 3 oz plus 2 tbsp

Teriyaki Sauce, 1.5 oz

Sesame Oil, 1.5 tbsp


Directions

You want to first cook your rice the day before. In doing so you allows the rice to dry overnight to create some beautifully crunchy grains in your pan!

Cut chicken thighs in large pieces and place in bowl. Season chicken with salt, garlic powder, cinnamon, allspice, Furikake and sesame oil. (If your making your rice ahead of time, marinate your chicken over night as well!)

Using a new cutting board and knife, cut your vegetables! Mince garlic and ginger. Small dice onions and carrots and cut the pineapple.

Pineapple Note: Slip off the top and bottom of the pineapple. With a knife, slice off outer skin in the shape of pineapple. Try not to cut off any of the flesh! Once your pineapple is peeled, cut pineapple 1/2 in from stem on both side. Cut or spoon open a vessel. With remaining flesh, slice off, trim and small dice.

Sear chicken in the one pan. Make sure oil is hot to ensure caramelization to flesh.

After 4 minutes in pan, flip over chicken. Cook for another 2 minutes. After add honey, teriyaki sauce, and soy sauce. Reduce slowly until the sauce coats your chicken evenly.

In a second pan , sauté carrots and onions over medium-high heat. Season with salt. Cook for 5 minutes, shaking pan every other minute. Add in pineapple. Season lightly with salt. Cook for 4 minutes, stirring every other minute. Last add in minced garlic and ginger. Cook for remaining 3 minutes stirring often.

Remove stir fry vegetables into bowl. Using same pan cook rice on medium heat for 5-7 minutes. Stir every other minute. Deglaze pan with 2 tbsp of soy sauce. Add the rice to your vegetables and mix!

Place rice and chicken on top of your pineapple boats and enjoy!
